Summer Blueberry Protein Pops

It's Summertime and the mercury is climbing! And after a workout, I am in need of two things: 1) PROTEIN, and 2) Something cold.

Enter the protein-packed, ice cold, organic Blueberry Yogurt Pops. Beyond being healthy for your heart (more on that later), they are rockstars for your skin! Blueberries contain anthocyanins-- antioxidants that protect the skin against free radicals (molecules that damage the skin's collagen and lead to wrinkles). On top of that, blueberries are also packed with vitamin C, another antioxidant crucial for collagen production and immunity

And of course, blueberries support your heart health because of it's generous fiber, potassium, folate, vitamin C, vitamin B6 and phytonutrient content? How so? The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease your risk of heart disease.

To give your a healthy dose of protein, these pops use Greek yogurt. Containing way more protein that regular yogurt, it helps keep you fuller, longer. Yogurt also contains probiotics crucial for gut health.

Blueberry Yogurt Pops

Blueberry Protein Yogurt Pop
  • 2 cups non-fat (or 2%) greek yogurt (using non-fat results in a chalky texture--I would use 2%)
  • 1.5 cups blueberries
  • ⅓ cup honey
  • 1.5 tsp lemon juice

Blend all ingredients together until smooth. Pour into 8 ice pop molds. Cover and freeze at least 4 hours.
